Here is a short NKS poem:
Map[StringJoin,CellularAutomaton[73,{{1},0},3]/.{0->"red ",1->"can "}]
Red Can 73
red red red can red red red
can can red red red can can
red can red can red can red
red red red red red red red
This form is just one of many defined by simple NKS rules, and there is a parallel with NKS modeling, in that the choice of words determines the poem, just as one can have a relatively small collection of simple rules which can model a vast collection of phenomena.

Here's a version inspired by Richard Feynman's poem (search for "I wonder why" in "Surely you're joking, Mr. Feynman!"):
Map[StringJoin,
CellularAutomaton[73, {{1}, 0}, 3] /. {0 -> "I wonder ",
1 -> "why "}]
I wonder I wonder I wonder why I wonder I wonder I wonder
why why I wonder I wonder I wonder why why
I wonder why I wonder why I wonder why I wonder
I wonder I wonder I wonder I wonder I wonder I wonder I wonder
